...Make Potatoes Au Gratin

Potatoes Au Gratin or Gratin Dauphinois is a classic French dish that is usually served as a side dish, but is hearty and rich enough to be enjoyed as the main entree. It’s a comfort food favorite and the combination of thinly sliced potatoes, creamy sauce and lots of cheese make it delicious and impressive. Here’s how you can make your own!

Ingredients:
- 4-6 large potatoes
- 2-3 sprigs of fresh rosemary, finely chopped
- 4 tablespoons butter
- 2 cups half-and-half
- 1/4 cup all-purpose flour
- salt and freshly ground black pepper to taste
- 2 cups shredded Gruyere cheese
- 1/2 cup shredded Parmesan cheese
- 1 tablespoon paprika

Instructions:
1. Preheat the oven to 350 degrees Fahrenheit. Grease a 9-inch baking dish and set aside.
2. Slice the potatoes into very thin rounds, about 1/8 inch thick. Place in a large bowl and season with rosemary, salt and pepper.
3. In a medium saucepan, melt the butter over low heat. Add the half-and-half and flour and whisk until combined and thickened. Remove from heat and add the shredded cheeses, stirring until melted.
4. Pour the cheese sauce over the potatoes and mix until evenly combined. Transfer to the prepared baking dish.
5. Sprinkle the paprika over the top of the potatoes. Bake for 45 minutes or until the potatoes are tender and the top is golden brown.
6. Serve immediately and enjoy!
